It’s true what they say: you really can have too much of a good thing. In this case, the good thing was cleaning.
We did such a good job of tidying up our house to prep it for staging a few weeks ago that I ended up emptying out our entire fridge. Good food didn’t go to waste or anything (we ate up most things, including most of these apples), but I definitely got rid of quite a bit of stuff that was nearing the end of its life.
The end result: a squeaky clean (but very bare) refrigerator! Not much to choose from for breakfast, lunch or dinner other than a few bread products, baby carrots, some leftover Israeli couscous salad and miscellaneous condiments (mustard, sriracha, ketchup, pesto and pickles).
Here’s a day’s worth of eats from a few Tuesdays ago:
Breakfast (home/in the car) – A slice of whole grain toast with peanut butter and a Granny Smith apple. Breakfast was super quick today and I ate most of it on my short commute to work. Once I got to the office I grabbed a cup of tea, booted up my computer and got cracking.
Lunch (work) – There were a few ingredients left over in our office fridge from last week (jackpot!), so I threw together a hummus sandwich on whole grain bread (a bit of a stretch but it was tasty!), a side salad with balsamic dressing, baby carrots, a cheese string and a handful of trail mix (pumpkin seeds, goji berries, walnuts and dried cranberries). Kind of a mashup but that’s ok! I meant to eat the Greek yogurt for lunch but ended up saving it for my afternoon snack.
Afternoon snack/drink (work) – after my Greek yogurt snack, I had a cup of green tea. It’s a nice milder alternative to coffee for the afternoon, a time when you want a pick-me-up but nothing too intense.
Dinner (home) – on the way home from the gym, I picked up a rotisserie chicken and a few salad bar items to go with whatever was remaining in my fridge at home.
Dinner took the form of a lone whole grain hot dog bun (another fridge straggler!) stuffed with chicken breast, shredded romaine lettuce topped with leftover chickpea and grilled vegetable couscous salad and three goat cheese-stuffed hot peppers from the grocery store salad bar. Man, I love those things! Not shown in the picture is the massive amount of sriracha I doused the chicken wrap with.
