Well well, what do we have here…a delicious, creamy dressing made with nothing but Greek yogurt, fresh cilantro, lime juice, green onions and a little salt? Just what your salad has been missing!
If vinaigrette dressings don’t do it for you, but you’re still aiming for a healthier homemade option, look no further than Greek yogurt dressing. This extremely simple, easy-to-make recipe takes just a few minutes to prepare and has a fresh, bright flavour that you just don’t get from bottled dressings.
The lime and cilantro flavours in this recipe would pair beautifully with Mexican-inspired ingredients (think corn, black beans, chiles, tomatoes). Or try it on your favourite lettuce/veggies salad or potato salad. Anything goes, really! It would even work as a topping for steak tacos, wraps and burgers.
A blender gives the dressing the smoothest consistency, but you could also use a mini food processor or immersion blender. Plain old elbow grease works as well if you have a whisk and don’t mind some chunky bits. Just chop your herbs and onion really finely and it shouldn’t be a problem. Actually, I kind of like when there are pieces of fresh herbs here and there.
This particular batch of dressing was destined for a gorgeous chicken salad bursting with grilled summer vegetables and fruit. I’ll be posting that recipe tomorrow so be sure to check back! The flavours are to-die-for, but what really gets me excited about that salad are the vibrant colours (hint: grilled peaches are involved). YUM!
- 2 green onions, thinly sliced
- 1/2 cup fresh cilantro, finely chopped
- Juice of 1 lime
- 3/4 cup plain Greek yogurt
- 1 tsp salt
- Add all the ingredients to a blender and puree until smooth. For a thinner consistency, add 1 tbsp of water and blend again. Transfer to a glass jar or container and refrigerate until ready to use.
